I’ll be honest with you – I’m a sweet rather than a savoury kinda gal in the mornings. Although I’m often tempted by a perfectly poached egg, nothing can get me up in the morning quite like the crunch of granola or the warm, fluffy pancakes. So, after playing around a little in the kitchen, I thought I would share a few of my favourite simple summer breakfast recipes!
Just got out of bed and looking for a tasty way to kickstart your day? Well, these deliciously simple fruity pots are just the pick-me-up you need for breakfast.
Granola pots are probably the easiest, yet best looking of them all. Whether it’s shop bought granola or homemade, all you have to do is add some yoghurt of your choice and some fruit.
Get layering, make them look all cute and you’re done! Although this is super simple, this was a serious 10/10.
Nothing says healthy summer breakfast like an ice-cold smoothie, but there’s no need to splurge on the store-bought version when you can replicate it at home.
This is definitely the most simple of the bunch and definitely packs in the most of your five a day. I’m really into smoothies at the moment, like big time. This recipe is the one that I’m currently obsessed with, so I thought that I would share it with you guys. This is totally customisable and you could also add in protein or even some different berries too!
You will need:
A large handful of blueberries
A large handful of blackberries
250ml almond milk
2 tbsp almond butter
4/5 ice cubes
3 tbsp honey (optional)
Sprinkling of granola to serve
As you can tell there’s not really a right or wrong way to do this. Just throw all of your ingredients into your blender and blend for a couple of minutes until everything is combined and serve! Sprinkle a lil bit of granola on top and enjoy! Super simple.
Lately I’ve been a bit obsessed with smoothie bowls. The concept is simple and I’ve made them many times but I believe that this is my best version yet, and the trick is all in the blending method.
This recipe only requires 3 ingredients, 1 blender and about 5 minutes. Simply add a couple of frozen bananas and frozen mixed berries into a blender and blend on low (this is key!) until it’s all blended but still a bit lumpy. Then add a little (not too much!) of non-dairy milk of your choice – I used coconut – and even some protein powder if you’d like. Blend some more on low and keep scraping down the sides until you have soft serve.
The best part about smoothie bowls is the toppings. I normally keep it super simple and add a spoonful each of coconut flakes and chia seeds for added nutrients, fibre and protein. Fruit makes a pretty addition but isn’t necessary since the entire bowl is made of fruit.
This makes the perfect breakfast or snack when you’re in a rush but need something substantial (and want something pretty). It’s especially great for the summer months when we’re all looking for another way to cool down while keeping time in the kitchen to a minimum.
